Grilled Fish with Green Olive Salsa (Serves 4)
4 x 200g white fish fillets (atlantic salmon/spanish mackerel/kingfish)
Salsa:
300g tub Chilli Garlic Stuffed Green Olives
2 medium tomatoes (seeded and diced)
2 shallots finely chopped
1/4 cup fresh coriander finely chopped
Finely grated rind of 2 limes/lemons
1. Marinate fish cutlets in 1/2 olive marinade liquid for 10-15 min.
2. Make Salsa by chopping olives finely, then place in bowl with shallots, tomatoes, coriander and lime/lemon rind. Pour remaining olive marinade over salsa mix and toss gently to combine.
3. Barbecue fish on medium heat for approximately 3-4 minutes each side. Spoon Green Olive Salsa over fish and serve with salad.
TIP: Marinade can be used to flavour
