Brunch, with the Don (Serves 4)

300g tub Pitted Mix Olives
4 slices fresh 20mm thick grain or sourdough bread
60ml extra virgin olive oil
4 eggs, fried
1 punnet cherry tomatoes, cut into halves shaved parmesan
4 parsley sprigs
Tabasco sauce
Rock salt and cracked pepper

1. Toast bread and drizzle with olive oil liberally
2. Cut Pitted Mix kalamata and green olives into halves and press into the oil laden toast.
3. Place an egg on top.
4. Garnish with shaved parmesan, rock salt, cracked pepper, Tabasco, cherry tomatoes and large sprig of parsley.

TIP: Marinade can be used to flavour your favourite meat and fish.
